SUMMER PASTA

If you are looking for a quick, easy, and delicious meal, then look no further. This is it!

Nothing goes better in the summer than fresh, home-grown tomatoes and basil. It’s one of our favorite combinations. I first had something similar to this in California many years ago and it has become a family favorite. 
 
In a large bowl mix the following:
 
3 medium-large tomatoes, chopped (I used an assortment of cherry tomatoes)
3/4 cup chopped fresh basil
2 cloves garlic, finely minced
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup freshly grated Parmesan cheese
1/4-1/2 cup Extra Virgin Olive Oil (to your taste)

Cook 16 oz pasta to al dente. With tongs or pasta spoon, add to the above mixture. You want a little of the pasta water to incorporate with the sauce. Mix well and add freshly grated parmesan cheese to taste.

One thing I love about this recipe is that I can adjust it to feed the number of people I need to feed. It’s just as simple to make for two people as it is to make for a crowd.
