This is one of those recipes I’ve always heard about but never eaten. It just didn’t sound very interesting to me so I never tried it, until today. It definitely will be on my list of things to make again. This would be a great holiday dish.
CAST OF CHARACTERS
2 tablespoons butter
3 slices bacon, diced
1/2 cup onion, diced
3 cloves garlic, minced
2 cups fresh or frozen English peas
3 ears corn, cut from the cob
12 oz frozen lima beans
salt and pepper to taste
1 tablespoon brown sugar
Begin by cooking the bacon in butter until the bacon renders its fat.
Next, add the onion and cook for 2-3 minutes until the onions are tender but not browned. Add the garlic and let cook for 30-45 seconds.
I used peas from our garden that I had frozen so these were added first, followed by the fresh corn. Cook for 4-5 minutes until the vegetables are tender.
Finally, add the lima beans (I used Fordhook because that is what I had in the freezer but regular limas would be great), salt, pepper, and brown sugar. Let this cook for about 5 minutes until the vegetables are just cooked through and it’s ready to serve.
