Avocados have quickly become one of my favorite foods, and Greek food is another that I am beginning to love! So, what could be better than an avocado tzatziki?

1 large avocado
1/2 cup plain yogurt
1/2 cup cucumber, grated and squeezed to drain
1 clove garlic, grated
1 tablespoon fresh dill, chopped
Juice of 1/2 lemon
salt & pepper to taste
lemon zest for garnish, if desired
In a medium bowl, mash the avocados with a fork, add the remaining ingredients and continue mashing until smooth. That’s it!



This is great served with pita chips, raw veggies, or on baked fish.
