So, I had a totally different recipe to post, but while preparing for dinner I came across this marinade for skirt steak. Because I had a hundred things going at the time (ok, not 100 but you get the picture), I whipped it up, put flank steak in a zip lock bag, poured on the marinade and threw it into the fridg to hang out until I was ready to cook it.
Oh.My.Word! This marinade is wonderful! Seriously, you need to try this! Of course, I altered this to my taste and the ingredients I had on hand, so feel free to do the same. While I used flank steak, this would be good on any type meat.
INGREDIENTS
1/2 cup olive oil
1/3 cup soy sauce
4 scallions, cut into thirds
3 cloves garlic
1/4 cup lemon juice (the original called for lime juice)
1/2 teaspoon red pepper flakes
1/2 teaspoon ground cumin
3 tablespoons coconut palm sugar
Add all ingredients to a blender and blend until smooth.
Do not be fooled by how this marinade looks. Looks are deceiving!
Place your meat in a ziplock bag and pour the marinade over. Massage into the meat and refrigerate until time to cook.
I used a flank steak and it was wonderful!
This marinade would make rocks taste good!
