PINA COLADA

When your husband brings home 22 cases of pineapples, you scour the internet for things to do with them. I have canned them, frozen them, looked at recipes for pineapple salsa, pineapple casseroles, you name it, I’ve looked at it. Of course, you have to make pina coladas with them, right?
 
I’ve never made them with fresh pineapples before. I found a couple of recipes and decided to combine the two. I sent the beloved to the store for the ingredients I needed and waited. The alcohol I asked for was a bottle of white rum and a bottle of dark rum. He brought back a bottle of white coconut rum and a bottle of gold rum HAHA! Oh well, at least I can say this is totally my own concoction.
 
Put all the ingredients in a blender and blend until smooth. Remove the canister and place in the freezer for 25-30 minutes. Blend again on pulse 4-5 times. The drink should be similar to a smoothie.
 
Pour into your glass of choice and enjoy! Mine is in a wine glass because …well, I don’t know why.

PINA COLADA

A wonderful, frozen drink for those hot days when you are dreaming of the beach. Made with fresh pineapples and coconut cream, it's the perfect, refreshing adult beverage you've been dreaming of.

Ingredients

  • 2 cups pineapple, cut into 1 inch cubes frozen
  • 3/4 cup coconut cream
  • 1/4 cup coconut water or coconut milk
  • 1 cup gold rum
  • 1/4 cup coconut rum
  • 1/2 lime, juiced
  • 3 cups ice

Instructions

  • Place all ingredients in a blender and blend until smooth.
  • Remove the canister and place in the freezer for 25-30 minutes.
  • Pour and enjoy!

 
 
I forgot to leave a pineapple out for garnish. I’ll try to remember the next time.
