CREAMED SPINACH

Are you looking for the perfect side dish to pair with steak or fish? Are salads becoming mundane? Try this! I know you will love it!


INGREDIENTS
2 cups fresh spinach
2 tablespoons butter
1 teaspoon olive oil
1 small shallot, diced
4-5 mushrooms, sliced
1/2 teaspoon fresh thyme
2 tablespoons cream cheese
1/4 cup heavy cream (more if you prefer a creamier spinach)
1/4 teaspoon ground nutmeg
salt & pepper to taste

In a large saute pan, melt the butter and olive oil. Add the shallots, mushrooms, and thyme and cook for 3-4 minutes until the vegetables are tender and translucent.

Add the spinach and let it cook until wilted.

Now for the lusciousness…. add the cream cheese, heavy cream, and nutmeg. Simmer until the cheese is melted and the cream begins to thicken. Season to taste with salt and pepper.

You could easily double this recipe. Enjoy!
