Who remembers eating Butterscotch Peanut Butter Haystacks when they were growing up? You may have eaten the milk chocolate version, as well. This recipe is no-bake making it perfect for those of us who do not enjoy baking. It’s also a great way to get the kids involved in the kitchen.
I didn’t know that 3 simple ingredients could be so delicious and addictive. This recipe makes approximately 68 haystacks. I thought we would be eating these for days but that was NOT the case. They were gone in less than 24 hours. To be clear, I was not alone in eating them. There were 3 others helping, but still…
HOW TO MELT BUTTERSCOTCH
Begin by melting the butterscotch. There are two ways this can be done. You can melt them in the microwave by heating for 30 seconds, stop and stir, heat for another 30 seconds, stop and stir, and repeat until all the butterscotch is melted, creamy, and smooth. My preferred way is to use a double boiler. If you do not have a double boiler, you can make your own by taking a medium-sized saucepan and filling it just over halfway with water. Bring the water to a boil. Place a large temperature safe bowl on the saucepan. Make sure the water is not touching the bowl or the butterscotch with scorch. Add the butterscotch and stir until it is fully melted.
Once the butterscotch has melted, turn off the heat and add the peanut butter. Mix well until it is thoroughly combined.
Next, add the chow mein noodles. Carefully, mix all the ingredients together trying not to break up the noodles.
Line large baking sheets with parchment paper. It took 2 1/2 sheet trays for this recipe. Using a teaspoon, place one spoonful onto the parchment paper. This size will make pieces that are about two bites each. If you prefer larger, that is your choice.
Allow them to cool completely before eating. You could also refrigerate them to speed up the process. Or, if you can’t wait, eat them warm but be prepared for sticky fingers.
VARIATIONS FOR HAYSTACKS
If you aren’t a fan of butterscotch, you can use chocolate chips instead.
You may also enjoy adding peanuts to the mixture or using Chunky Peanut Butter in place of Creamy.

Butterscotch Peanut Butter Haystacks
- 11 ounces butterscotch morsels
- 3/4 cup peanut butter, creamy
- 10 oz chow mein noodles
- Melt the butterscotch morsels in a double boiler OR a microwave.
- Stir in the peanut butter until thoroughly combined.
- Gently mix in the chow mein noodles.
- Place by teaspoonful onto parchment lined baking trays.
- Allow them to cool completely before eating.
