SAUSAGE AND EGG MUFFINS

This 4 ingredient recipe can be ready in 30 minutes or less. It's the perfect healthy breakfast on the go. Made with sausage, eggs, cheese, and Bisquick, it's easy to prepare ahead and have ready for those busy mornings when you don't have time to cook.

Ingredients

  • 1 pound sausage cooked and drained
  • 4 eggs beaten
  • 1 cup cheddar cheese grated
  • 1 cup Bisquick

Instructions

  • Brown the sausage in a medium skillet until no longer pink. Drain and set aside to cool.
  • Add the cooked sausage to a large mixing bowl. Stir in the Bisquick to incorporate.
  • Add the eggs and cheese. Stir well.
  • Spray a 12-tin muffin pan with non-stick spray. Spoon the mixture into each tin in equal amounts, about 2/3 full.
  • Bake in a preheated 350-degree oven for 20 minutes.
  • Remove to a wire baking rack. These may be eaten now or cooled and stored in an airtight container in the refrigerator until needed.

Notes

OPTIONAL ADDITIONS: Onions, peppers, mushrooms. You could also use any type of cheese you prefer.
