Microwave Peanut Brittle
A simple recipe for Microwave Peanut Brittle that can be made in less than 30 minutes.
Servings: 10 servings
- 1 cup sugar
- 1/2 cup light corn syrup
- 1 1/2 cup salted peanuts
- 1 tablespoon butter
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
Thoroughly combine the sugar and corn syrup. Microwave on high for 5 minutes.
Add the peanuts and butter. Mix quickly, return to the microwave and cook for 3-4 minutes until it turns a golden caramel color.
Add the baking soda and vanilla. Mix well. It will begin to foam up.
Pour the mixture onto a large baking tray that has been lightly sprayed with non-stick spray. Spread the mixture as evenly as possible.
Allow it to cool completely. Break up the peanut brittle into pieces.
Store in an air tight container.
