APPLE BUNDT CAKE

Ingredients

  • 3 eggs
  • 2 cups sugar
  • 2 cups vegetable oil
  • 1 orange juiced and zested
  • 3 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 teaspoons vanilla extract
  • 3 large Granny Smith apples peeled, cored, and diced
  • 1 cup walnuts chopped

Instructions

  • Add the sugar, eggs, oil, and orange juice and zest to the bowl of a KitchenAid mixer. Mix until smooth and combined.
  • Combine the flour, baking soda, cinnamon, nutmeg, and salt. Add by 1/4ths into the mixer bowl. Mix after each addition but do not overwork.
  • Remove the bowl from the mixer. Add the vanilla extract, apples, and walnuts. Using a wooden spoon, mix until thoroughly combined.
  • Pour the batter into a prepared bundt pan. The batter will be very thick.
  • Bake in a preheated 325 degree oven for 1 hour 15 minutes or until a toothpick inserted in the center comes out clean.

Notes

If you do not have a stand mixer, you may use a hand mixer or a wooden spoon.
