MIDDLE EASTERN KOFTA KEBABS

These grilled kofta kebabs are perfect for a summertime meal when you are craving those Middle Eastern food flavors.

Ingredients

  • 1 pound ground beef
  • 1/2 cup fresh parsley finely chopped
  • 1 small onion finely diced
  • 1/4 teaspoon ground allspice
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper freshly ground
  • pinch cayenne pepper

Instructions

  • If using wooden skewers, soak them in a pan of water for 30 minutes to prevent burning.
  • Mix all ingredients together in a large bowl. Form into golf ball sized meatballs.
  • Place 4 meatballs per skewer. With your hands, work the meatballs together by pressing together gently so they become one continuous piece of meat on the skewer.
  • Grill over medium-high heat until the beef is cooked through or internal temperature reaches 160 degrees, approximately 10-15 minutes total.
