PHILLY CHEESESTEAK SLOPPY JOES

- 2 pounds ground pork (or beef)
- 1 medium onion diced
- 1 medium red or yellow bell pepper diced
- 1 tablespoon garlic minced
- 1/4 cup ketchup
- 2 tablespoons Worcestershire Sauce
- 2 tablespoons corn starch
- 2 cups chicken stock
- salt and pepper to taste
- 1 cup Provolone cheese shredded
In a small amount of olive oil or butter, saute the onion and peppers for 3-4 minutes. Add the garlic and cook for 1 minute.
To the vegetables, add the ground pork and cook over medium-high heat until browned.
Add the ketchup and Worcestershire Sauce. Stir well.
Combine the corn starch and chicken stock. Mix until the corn starch is dissolved. Add to the meat mixture and cook until the liquid is reduced and slightly thickened.
Add the cheese, mix well, and simmer until the cheese melts.
Serve over hamburger buns or Texas Toast.
This can be made using ground beef, pork, or chicken.
Beef stock can be substituted for chicken stock.
Provolone is the perfect cheese, but substitute whatever cheese you have on hand.
