Ingredients

  • 1 pound shrimp shelled and deveined
  • 2 tablespoons butter
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic minced
  • 1/2 cup dry white wine
  • 1/4 teaspoon red pepper flakes
  • 1 lemon juiced
  • 1/4 cup Italian parsley chopped
  • 8 ounces pasta spaghetti, linguini, or fettuccine
  • salt and pepper to taste

Instructions

  • Prepare the pasta according to package directions. Drain and set aside.
  • Heat the butter and olive oil in a large pan. Add the garlic and saute for approximately one minute until it becomes fragrant.
  • Add the wine, red pepper flakes, salt, and pepper. Simmer until the wine is reduced by half.
  • Add the shrimp to the sauce and cook just until the shrimp becomes pink. 2-4 minutes. Do not overcook the shrimp or it will become rubbery.
  • Toss the pasta into the pan and stir to coat the pasta with the scampi sauce.
  • Add the lemon juice and parsley. Mix well.
