- 1 pound shrimp shelled and deveined
- 2 tablespoons butter
- 2 tablespoons extra virgin olive oil
- 1 teaspoon garlic minced
- 1/2 cup dry white wine
- 1/4 teaspoon red pepper flakes
- 1 lemon juiced
- 1/4 cup Italian parsley chopped
- 8 ounces pasta spaghetti, linguini, or fettuccine
- salt and pepper to taste
Prepare the pasta according to package directions. Drain and set aside.
Heat the butter and olive oil in a large pan. Add the garlic and saute for approximately one minute until it becomes fragrant.
Add the wine, red pepper flakes, salt, and pepper. Simmer until the wine is reduced by half.
Add the shrimp to the sauce and cook just until the shrimp becomes pink. 2-4 minutes. Do not overcook the shrimp or it will become rubbery.
Toss the pasta into the pan and stir to coat the pasta with the scampi sauce.
Add the lemon juice and parsley. Mix well.
