GERMAN CUCUMBER SALAD

Springtime is just around the corner. I'm dreaming of picnics, bbq's, and burgers on the grill. This recipe for an authentic German Cucumber Salad is the perfect side dish to any of those things.

Ingredients

  • 1 large English cucumber very thinly sliced
  • 1 small onion thinly sliced
  • 1/2 cup fresh dill chopped
  • 2 tablespoons chives chopped
  • 3 tablespoons oil
  • 3 tablespoons white wine vinegar
  • 1 teaspoon sugar or to taste
  • 1 teaspoon sea salt or to taste
  • 1/2 teaspoon pepper freshly ground

Instructions

  • 1. Prepare the cucumbers and onions preferably using a mandolin. If one is not available, slice them as thin as possible.
  • 2. Add the cucumber, onion, dill, and chives to a large bowl.
  • 3. Mix the remaining ingredients together in a small bowl. Pour over the cucumbers and toss until well combined.
