If you are looking for a quick, easy, appetizer for the holidays, look no further…this is it!
I have made this the past two years, and it is always a winner.
CAST OF CHARACTERS
1 bag fresh cranberries (12 oz)
1 cup sugar
2 jalapenos, seeded and finely minced
2 scallions, finely minced
3 tablespoons cilantro, finely chopped
1 loaf French bread, 2″ diameter sliced on the diagonal 1/4″ thick
8 oz cream cheese
Preheat oven to 400 degrees. Slice the French bread on the diagonal approximately 1/4 inch. Drizzle lightly with olive oil and bake until crisp. Remove from oven and let cool.
In a food processor, pulse the cranberries until finely minced. Add cranberries, sugar, jalapenos, and scallions to a medium bowl and let mascerate for 10-15 minutes. Drain the cranberry mixture, add the cilantro, and set aside.
To each bread slice, slather with cream cheese and top with the cranberry mixture.
This is super simple and super delicious!
