I have never been much of a sweets eater *gasp*, but give me something salty, spicy, garlicky…oh my! This recipe fits all those categories and is a favorite at our house.
INGREDIENTS
2 pounds green beans, washed and trimmed
2 1/2 cups white vinegar
2 1/2 cups water
1/4 cup canning salt
garlic cloves
red pepper flakes
dill seed
Pack the green beans into sterilized pint jars. (I used quarts and adjusted the spices accordingly.)
To each jar add one clove of garlic, 1/4 teaspoon red pepper flakes, 1/2 teaspoon dill seed.
Meanwhile, heat the vinegar, water, and salt until the salt dissolves. This recipe will make 4 pints so adjust for the quantity you are making. Pour over the beans leaving 1/4 inch head space. Place lids on jars and process for 10 minutes in a boiling water bath canner.
These should sit for a week or two to allow all the flavors to soak into those crispy beans.
