TURKEY BREAST ROASTED WITH ORANGE HONEY SAUCE

You know what they say about “the best laid plans” ….. My plan was to roast a turkey breast for dinner and use the leftovers for panini sandwiches on homemade focaccia bread. Well, this turkey was so delicious that there were no leftovers!

 
INGREDIENTS
1 or 2 large turkey breasts
olive oil
salt and pepper
paprika
herbs de provence
3/4 cup honey
1/4 cup orange juice
1 tablespoon apple cider vinegar
1 teaspoon dijon mustard
 
Begin by making the orange honey sauce. In a small saucepan, heat the honey, orange juice, apple cider vinegar, and dijon mustard. Bring to a boil, reduce the heat, and simmer for 10 minutes. Remove from heat and let sit for 10 minutes. The sauce will start to thicken a little as it cools. This is what you want it to do.
 
 
 
 
Preheat the oven to 375 degrees. Cover a baking sheet with aluminum foil to avoid a huge mess and lots of scrubbing later. (Ask me how I know.) Place the turkey breast on the foil and rub it with olive oil. Season generously with salt, pepper, paprika, and herbs de provence. 
 
 
 
 
Roast the turkey for 20 minutes, then spoon a few teaspoons of the orange honey sauce over the meat. Return to the oven for another 10 minutes, then spoon the sauce over the turkey again. Return to the oven again and continue cooking until the turkey is cooked through. Do not overcook as this will make the meat dry. Remove from the oven and let it rest for at least 10-15 minutes before slicing. Serve with the remaining sauce if desired.
