We had five of our six children home for Easter lunch this year. I baked the traditional ham and decided to try something different for a salad. OH.MY.GOODNESS!! Where has this been all my life?!? This is a new favorite in our home. It is so good that the Mr. had it for breakfast this morning.
INGREDIENTS
4 pounds grapes, washed and drained well (green, red, or a combination)
1 package cream cheese, room temperature
1 cup yogurt (or sour cream)
1/3 cup sugar
2 teaspoons vanilla extract
1/2 cup walnuts, chopped (I used more and loved it)
Wash the grapes and let them drain well.
In a large bowl, beat the cream cheese, sugar, vanilla, and yogurt until light and fluffy. I used the kitchenaid with the paddle attachment. (You might want to make an extra batch of this and just eat it with a spoon!)
Add the walnuts and mix well. Fold in the grapes until everything is coated. Refrigerate until ready to eat.
Have I mentioned how scrumptious this is? Trust me…try it! You won’t regret it.
