I will apologize now for all the onion posts you will be seeing in the near future. As I posted here
, we have an abundance of onions that needed to be used or preserved. This is one of the ways I used them.
1-2 medium onions, sliced
1 tablespoon extra virgin olive oil
1 15 oz can garbanzo beans
3 tablespoons tahini paste
3 cloves garlic, peeled
1 lemon, juiced (you need 1/4 cup lemon juice)
1 teaspoon sea salt
pepper to taste
In a medium saucepan, heat the olive oil and add the onions. Saute over low heat for 25-30 minutes, stirring occasionally, until the onions are nicely browned and carmelized.
In the meantime, add the remaining ingredients to a food processor fitted with the blade attachment. When the onions are finished, add them to the other ingredients and blend until smooth.
This is a super easy, super delicious appetizer or snack.
