CARMELIZED ONION HUMMUS

I will apologize now for all the onion posts you will be seeing in the near future. As I posted here, we have an abundance of onions that needed to be used or preserved. This is one of the ways I used them.

INGREDIENTS
1-2 medium onions, sliced
1 tablespoon extra virgin olive oil
1 15 oz can garbanzo beans
3 tablespoons tahini paste
3 cloves garlic, peeled
1 lemon, juiced (you need 1/4 cup lemon juice)
1 teaspoon sea salt
pepper to taste
In a medium saucepan, heat the olive oil and add the onions. Saute over low heat for 25-30 minutes, stirring occasionally, until the onions are nicely browned and carmelized.

 

In the meantime, add the remaining ingredients to a food processor fitted with the blade attachment. When the onions are finished, add them to the other ingredients and blend until smooth.

 

Serve with pita chips, fresh veggies, or sourdough crackers. (Homemade of course *wink*)
This is a super easy, super delicious appetizer or snack.
