PLUM CLAFOUTIS

I hope everyone is sitting down….I made dessert last night! 

 
 
 
 
I really liked this recipe because it was not overly sweet and was very simple to make. In the future I will try it with apples, peaches, pears, maybe mangoes? I think any firm fruit would hold up well in this.
 
INGREDIENTS
8-10 plums, washed and sliced
1 tablespoon butter, room temperature
3 eggs, extra large
1/3 cup sugar
2 teaspoons vanilla extract
6 tablespoons flour
1 1/2 cups heavy cream
zest of one lemon
 
Preheat the oven to 375 degrees.
 
Butter a 10 inch round baking dish and sprinkle with about 1 tablespoon of sugar.
 
In a stand mixer with a paddle attachment, beat the eggs and sugar together on medium-high speed until light and fluffy. This should take about 3 minutes.
 
Reduce speed to low and add the vanilla extract, heavy cream, flour, and lemon zest and mix well. Set aside for about 10 minutes.
 
Prepare the fruit and arrange them in a single layer in your baking dish. (The plums I used were not very sweet so I macerated them in a 1/4 cup sugar for about 30 minutes then drained them before using.)
 
 
 
 
Pour the custard mixture over the fruit and bake for 35-40 minutes until golden brown and the custard is firm. 
 
 
 
 
Serve warm or at room temperature with confectioners sugar sprinkled over the top or with a scoop of vanilla ice cream.
