SHRIMP BURGERS

If the beloved’s “oohs, aahhhs, and mmmms” are any indication, then these Shrimp Burgers were the perfect weeknight dinner. They are easy to assemble and can be served in less than 30 minutes.

Shrimp has always been a favorite of ours. It is such a versatile ingredient that can be used in many different ways. Do you remember the Forrest Gump quote about shrimp? It’s true! I decided to try shrimp burgers and they were delicious.

Begin by cleaning and deveining the shrimp. Roughly chop them and set aside.

In the bowl of a food processor, add the Panko bread crumbs and pulse for a few seconds until they are finely ground. Empty them into a large bowl.

Add 1/3 of the shrimp, the mayo, salt, pepper, and cayenne to the food processor. Pulse until the shrimp are finely chopped. Add the remaining shrimp and pulse until they are coarsely chopped. Stir in one beaten egg and the green onions.

Place the shrimp mixture into the bread crumbs and mix well. I decided to make shrimp sliders rather than large shrimp burgers. Each patty had about 1/4 cup of the mixture and I ended up with 14 patties.

In a large saute pan over medium-high heat, add 2-3 tablespoons of olive oil. Place the shrimp burgers carefully into the pan. Do not overcrowd the pan or they will steam rather than frying. Work in batches.

Cook for 3-5 minutes on one side, flip them over and cook for an additional 2-3 minutes until they are golden brown and cooked through.

Serve on toasted buns with lettuce, tomatoes, and your favorite condiments. I used a sriracha mayonnaise and it was perfect.

  • 2 pound shrimp peeled and deveined
  • 1 egg
  • 2 tablespoons mayonnaise
  • 1 cup Panko bread crumbs
  • 3 green onions diced
  • 1 clove garlic minced
  • cayenne pepper or to taste
  • salt and pepper to taste
