SHRIMP BURGERS

If the beloved’s “oohs, aahhhs, and mmmms”, are any indication, then this was the perfect weeknight dinner. It’s easy to assemble and can be served in less than 30 minutes.

Shrimp has always been a favorite of ours. When I saw the large jumbos on sale this week I just couldn’t pass it up. (Always) looking for new recipes to try, I found a few for shrimp cakes that sounded really good. Instead of small patties, I decided to make burgers.

INGREDIENTS
1 pound shrimp, wild-caught, cleaned, peeled, and minced
2 eggs
1 tablespoon mayonnaise
1 tablespoon cornstarch (non-GMO)
1/2 medium red onion, minced
1 clove garlic, minced
pinch of cayenne pepper
salt and pepper, to taste

Add all the ingredients to a medium-sized bowl and mix well. Yes, I love black pepper!

In a large saute pan over medium-high heat, add 2-3 tablespoons of olive oil. Using a half cup measuring cup, place the shrimp mixture into the pan and even out the thickness of the patties. (This mixture is a very wet mixture and is not going to be easily handled with your hands, thus the measuring cup.) This made 4 nicely sized patties for us.

Cook for 2-3 minutes on one side, flip them over and cook for an additional 1-2 minutes until they are golden brown.

Serve on toasted buns with lettuce, tomatoes, and your favorite condiments. I used a sriracha mayonnaise and it was perfect.
