This light and refreshing salad is one of our favorites. It’s easy to assemble and is the perfect salad for grilled or roasted meats.

When fresh tomatoes begin ripening on the vines, my mind always thinks of this salad. How can you go wrong with mozzarella cheese, fresh tomatoes, and basil?

This salad also could be served as an appetizer. Need a little afternoon snack? Yep, it’s great for that, too!

If you love eating seasonal produce, this is the recipe for you.

On a small platter, alternate thick slices of mozzarella cheese and fresh tomatoes. Sprinkle with basil, salt, and pepper to taste. Drizzle with olive oil and serve. You can also add a drizzle of balsamic reduction if your family enjoys that. Most of my family prefers it without.

CAPRESE SALAD

A light and refreshing summer salad made with mozzarella cheese, fresh tomatoes, and basil. Perfect for grilled or roasted meats, as an appetizer, or an afternoon snack.

Ingredients

  • Mozzarella cheese sliced 1/2 inch thick
  • Fresh tomatoes sliced 1/2 inch thick
  • Fresh basil chopped
  • salt and pepper to taste
  • olive oil
  • Balsamic reduction optional

Instructions

  • Alternate slices of cheese and tomatoes on a small tray.
  • Sprinkle with basil, salt, and pepper.
  • Drizzle with olive oil.

Notes

To make a balsamic reduction, add the desired amount of balsamic vinegar to a small pan. Heat over medium heat, stirring frequently, until the balsamic has reduced by half. Drizzle over the salad, if desired.
