Winter Salad with Fruit in salad bowl

This is not so much a recipe for Winter Salad with Fruit as it is a starting point for you to use your own imagination.

Whether you are looking for a wonderful side dish for a terrific meat entree or simply a light lunch or dinner, this is the perfect starting point. This salad is packed with flavor and will not disappoint.

I have made this Winter Salad with Fruit using fresh spinach as well as bagged Spring Mix greens. Either work very well, so use the one that you prefer. The fruits and berries I chose were those I had on hand and others that were available at the market. Most of the fruits can now be found year-round in your local markets. Choose your favorites and have fun! It will be delicious no matter what you choose.

FRUIT OPTIONS FOR WINTER SALAD

Place your greens of choice into a large bowl.

Peel, core, and dice 2 apples and add to the greens. I use either Gala apples or Cosmic apples. Choose apples that are somewhat firm in texture and will hold up well when mixed.

As with the apples, I prefer a firm pear such as Bosc or Red pears. Once again, it’s your preference. Peel, core, and dice and place in the bowl.

Kiwis are sometimes hard to find in our area, but if you have them available, they are great in this salad. Many people find the peel unpleasant to eat but there are many benefits to leaving the peel on. It contains fiber, folate, and antioxidants that are beneficial to your all-around health. Slice and quarter the kiwi before adding it to your salad.

Drain 1 small can of mandarin oranges and add to the bowl.

To your salad, add 1/2 cup of dried cherries or cranberries, and 1 cup of pomegranate arils. Toss well and serve with your favorite dressing. Our choices are fruit-flavored balsamic vinegar, poppy seed dressing, or a light vinaigrette.

Ingredients

  • 5.5 oz Spring Mix Salad may use fresh spinach
  • 2 each Gala apples, peeled, cored, and diced or apple of your choice
  • 2 each Bosc pears, peeled, cored, and diced or pear of your choice
  • 2 each Kiwi fruit, sliced and quartered
  • 10 oz Mandarin oranges, drained
  • 1 cup Pomegranate arils
  • 1/2 cup Dried cherries may use dried cranberries

Instructions

  • Add all ingredients to a large salad bowl.
  • Toss and add your favorite salad dressing.
