MEATBALL SLIDERS ON GARLIC ROLLS

Sliders seem to be very popular these days. I’m not surprised because they are great as party foods, are easy to assemble, and can feed a crowd. The most popular sliders are probably ham and cheese, which are delicious, but we really enjoy these meatball sliders.

This recipe could be easily prepared by using store-bought meatballs and marinara sauce, but I prefer the homemade, from scratch version. I like knowing what ingredients are in the foods I feed my family and friends.

INGREDIENTS
1 pound ground beef
1 egg, beaten
1-2 tablespoons onion, finely minced
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1 tablespoon fresh basil or Italian parsley, chopped (can substitute 1 teaspoon Italian seasoning)
salt & pepper to taste
32 oz marinara sauce (I used spaghetti sauce I had previously canned)
Mozzarella Cheese, grated
1 package Hawaiian rolls
4 tablespoons butter
2 tablespoons garlic, minced
1/2 teaspoon Italian seasoning
2 tablespoons Parmesan cheese, grated

For the meatballs: In a large bowl, combine the beef, egg, onion, cheese, garlic, and basil. Add salt and pepper to taste. Form into one inch balls and place on a baking sheet lined with aluminum foil or parchment paper. Bake in a 375-degree oven for 20-25 minutes until cooked through. Remove and drain on paper towels.

Heat the marinara sauce in a large saute pan. Add the meatballs and let simmer for 10-15 minutes.

To assemble: Cut the rolls horizontally without dividing into individual rolls. Lay the top portion to the side. Remove a small portion of each bottom roll so that the meatballs will nest down into them. Place the meatballs on the rolls. Cover with grated mozzarella cheese.

To prepare the garlic butter: Add the butter, garlic, Italian seasoning, and parmesan cheese to a small saucepan and heat until the butter is melted.

Place the top of the rolls onto the meatballs. Pour the garlic butter over the top of the rolls.

Bake in a preheated 350-degree oven for 20-25 minutes until the cheese is melted and they are lightly browned.

As you can see, some of the garlic and herbs got a little over-toasted. We just brushed it off and they were still delicious.
