BROCCOLI SALAD

Spring is here and summer is just around the corner. I’m in search of recipes that are quick, easy, and fresh. This recipe is great as a side dish with just about any meal you fix.
 
INGREDIENTS
Salad:
8 cups broccoli florets, bite sized pieces
1/2 cup red onion, finely diced
1/2 cup celery, finely diced
1 cup cooked crumbled bacon
1/2 cup dried cranberries (or raisins)
Dressing:
1/2 cup granulated sugar
1 1/2 cups mayonnaise
2 tablespoons white vinegar
salt and pepper to taste
 
Add the salad ingredients to a large bowl and set aside.
 
 
 
In a medium bowl, add the dressing ingredients and whisk until very smooth. Pour over the salad ingredients. Refrigerate until ready to serve. This can be prepared a day or two ahead with no problems.
