COD POACHED IN BUTTER

This dinner was so easy to make and SO delicious! The idea came from a dear friend who did something similar but served it with a pesto sauce. I didn’t have pesto available, so I omitted that and served it over a bed of sauteed kale. Oh my! The mister has already asked me to make it again.

 
 
 
 
1.5 pounds wild caught cod fillets
1 stick of butter
pepper
 
Melt the butter in a saute pan over medium-low heat. Sprinkle the cod lightly with pepper and add to the butter. Cook for approximately 15 minutes, continually spooning the butter over the fish until the fish is cooked and begins to flake. I flipped the fish about half way through the cooking time.
 
This reminded me of lobster with butter sauce. Who doesn’t like that?
