Arugula has become one of my favorite lettuces. I love the tender leaves and the peppery taste. It pairs well with spinach to make a delicious salad.
For the salad:
4 cups arugula & spinach
1 apple, peeled and cut into matchsticks
1/2 cup candied walnuts (Recipe here)
Place all the salad ingredients into a large bowl. Serve with the Cider Vinaigrette
For the dressing: (Cider Vinaigrette)
1/4 cup apple cider vinegar
2 1/2 tablespoons honey
1/4 teaspoon cinnamon
pinch of cumin
pinch of curry powder
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
1/2 cup olive oil
Add the first 7 ingredients into a medium bowl. Slowly whisk in the olive oil so that it combines well.
This was wonderful served alongside a grilled steak.
