This is a simple, delicious meal for those evenings you don’t want to stand over a hot stove. I hope you enjoy it as much as we do.
INGREDIENTS
2 salmon filets
2 tablespoons freshly squeezed lemon juice
2 cloves garlic, minced
2 tablespoons butter
1/2 teaspoon Italian seasoning
salt & pepper to taste
Score the tops of the salmon and place on individual pieces of aluminum foil.
In a small saucepan, add the lemon juice, Italian seasoning, and garlic and bring to a boil. When it has reduced slightly, add half the butter and allow it to melt. Add the remaining butter and stir to melt. This will allow the sauce to thicken a little.
Pour evenly over the two pieces of salmon, salt and pepper to taste, and seal them tightly in the aluminum foil.
Bake in a preheated 375 degree oven for 15-20 minutes, depending on the size and thickness of the salmon.
Turn the oven to broil, uncover the salmon and bake for an additional 2-3 minutes until lightly browned.
