GRILLED CHEESE WITH CARAMELIZED ONIONS & MUSHROOMS

It’s COLD in Georgia! Last night’s low was 15 and our high today is supposed to be 34. That is very unusual for us. One good thing about really cold weather is the comfort food you can make, and who doesn’t love grilled cheese sandwiches with tomato soup?


INGREDIENTS
2 medium onions, sliced 1/4 inch thick
4 tablespoons butter, divided
8 oz mushrooms, sliced
8 slices sourdough bread
1 pound Havarti cheese (or your favorite cheese)
Begin by caramelizing your onions. Add the onions to a saute pan along with 3 tablespoons butter and cook over low heat until they are lightly browned. This will take about 40-45 minutes.

In the meantime, saute the mushrooms until lightly browned and tender.  Add the mushrooms to the caramelized onions.

Now it’s time to assemble the goodness! Place the cheese on one slice of bread.  Havarti is one of our favorites! It is very creamy and melts beautifully! Add the onion and mushroom mixture, followed by more cheese. Next, place the other slice of bread on top. Butter the outside of the bread with softened butter. Cook in a cast iron skillet, a griddle, or a non-stick pan until golden brown and the cheese is melted.

The beloved’s first comment was, “Oh, man! This is delicious!” I have to agree with him. What are your favorite comfort foods?

    Had to think hard about your comfort food question after seeing this grilled cheese. Spicy black beans and rice are my belly-warming go-to right now.
