Weeknight meals can be a challenge. On those hectic days we all encounter, you want something easy to prepare using simple ingredients that you probably already have on hand, and doesn’t require a lot of prep work. This checks all those boxes and is delicious as well.
Our daughter and her husband were coming over for dinner. I gave her a few options of what we could have and this is what she chose.
INGREDIENTS
6 chicken thighs, bone-in
1 teaspoon garlic powder
salt and pepper, to taste
6 cloves garlic, chopped
1/3 cup honey
1/4 cup water
2 tablespoons rice wine vinegar
1 tablespoon soy sauce
Rinse the chicken and pat dry with paper towels. Season with salt, pepper, and garlic powder.
Heat a large skillet over medium-high heat and sear the chicken on both sides in a little olive oil until golden brown. Reduce the heat, cover, and let the chicken continue to cook until completely cooked through.
Remove the chicken from the pan and pour off all but 2 tablespoons of the drippings. Mix the honey, water, vinegar, and soy sauce in a bowl. Add the chicken back to the pan, sprinkle the garlic around the chicken, and pour the sauce around the pan. Allow this to cook until the sauce reduces by half.
This is delicious with rice and a salad.
