BROCCOLI SALAD WITH BLUEBERRIES & POPPY SEED DRESSING

I love salads and this is good enough to be a meal all by itself. I may have to put it on the Meatless Monday Menu.

When you think about the ingredients in this salad it can actually be quite healthy. Use organic fruits and vegetables and it is not only good for you but it contains some of the major food groups….protein, vegetables, fruits, dairy.

This recipe is perfect to serve with sandwiches, works well for brunch menus, and also is delicious with grilled meats. In fact, it is the perfect side dish for any meal.

Light, refreshing, and simple to prepare, it’s a great recipe to get the kids involved.

The Poppy Seed Dressing is delicious and could be used on a tossed salad as well. If you don’t have Greek yogurt, strain regular yogurt in a double layer of cheesecloth for an hour or two.

BROCCOLI SALAD WITH BLUEBERRIES & POPPY SEED DRESSING

A light, healthy, flavorful, gluten-free salad that can be served with everything from sandwiches to steaks.

Ingredients

BROCCOLI & BLUEBERRY SALAD

  • 1 head broccoli broken into small florets
  • 1 cup blueberries
  • 1/2 cup pecans chopped
  • 1 apple diced

POPPY SEED DRESSING

  • 1 cup Greek yogurt
  • 1/4 cup honey
  • 1 tablespoon lemon juice
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons poppy seed

Instructions

BROCCOLI & BLUEBERRY SALAD

  • Mix all ingredients together in a large bowl.
  • Pour the dressing over the vegetables and toss to combine thoroughly.

POPPY SEED DRESSING

  • Whisk all ingredients together in a medium bowl.
  • Add as much or as little dressing to the vegetables as you prefer. Toss well.
