I love salads and this is good enough to be a meal all by itself. I may have to put it on the Meatless Monday Menu.
When you think about the ingredients in this salad it can actually be quite healthy. Use organic fruits and vegetables and it is not only good for you but it contains some of the major food groups….protein, vegetables, fruits, dairy.
1 head broccoli, broken into small florets
1 apple, diced
1 cup blueberries
1/2 cup pecans, chopped
For the Poppy Seed Dressing:
1 cup yogurt, preferably Greek but you can strain regular yogurt instead
1/4 cup honey
1 tablespoon lemon juice
2 teaspoons apple cider vinegar
2 teaspoons poppy seed
Mix all the salad ingredients together in a large bowl.
Combine the dressing ingredients well and pour over the salad. Mix well and serve.
