AVOCADO & HUMMUS TAQUITOS

It’s Taco Tuesday!! Well, actually it’s not Tuesday but there is NEVER a bad day to have Mexican food at my house.

Those that know me, know I have an insatiable appetite for Mexican food. I could eat it seven days a week but the beloved would not be happy with that. He does NOT like spicy food although he has come a long way since we married.

INGREDIENTS (makes 3 taquitos but can easily be doubled or tripled or whatever)
1 avocado
hummus (I used roasted garlic hummus and it was delicious)
shredded Mexican blend cheese
flour tortilla shells

Split the avocado in half and remove the pit. Remove the avocado from the shell using a spoon. Slice about 1/4-1/2 inch thick. Dip in lemon juice to prevent them from turning brown.

Lay a tortilla shell on a flat surface. About an inch from one edge place 2 tablespoons of hummus. Spread down the shell making a one-inch strip. Place the sliced avocado on top of the hummus. Add the shredded cheese.

Roll the taquitos cigar style and place on a baking pan. Brush with olive oil.

Bake in a preheated 400-degree oven for approximately 15 minutes or until golden brown. Remove from the oven and allow to sit for 5-10 minutes before eating. Note: The center may ooze out a little. No problem, just use a spoon and push it back in.

If you want to serve these as an appetizer, cut the taquitos into thirds. We had these for lunch. I served them with a sour cream/sriracha mixture.
