One of my favorite things about summer is tomatoes. There is nothing better than a fresh tomato from the garden. Our garden has provided us with an abundance of tomatoes this year. This is what I picked in one day.
The traditional caprese salad is a slice of tomato on top of a slice of mozzarella cheese, basil, and drizzled with olive oil. It’s a beautiful dish but was missing something in my opinion. This recipe was an attempt to add a little more “zing” to the salad.
INGREDIENTS
tomatoes, sliced
mozzarella cheese, cubed
red onion, thinly sliced
basil, fresh or dried
olive oil
red wine vinegar
salt and pepper
The quantities are completely up to you and your taste. Add the tomatoes, cheese, and basil to a bowl. Drizzle with olive oil and vinegar to taste, as well as salt and pepper. Toss well and refrigerate until ready to serve.
My new favorite salad! Excuse me while I go and pick more tomatoes.
