I first made this marinade one night when we were going to grill skirt steak. Because 1) I was in a hurry and 2) I didn’t know how it would turn out, I didn’t take pictures. That was a mistake. This is a wonderful marinade for all types of meat. Tonight, we are marinating chicken breasts.
INGREDIENTS
1 cup Balsamic Vinegar
1/3 cup coconut palm sugar (brown sugar works as well)
2 cloves garlic minced
2 sprigs rosemary
pinch of crushed red pepper flakes
1/3 cup olive oil
Add the vinegar, sugar, garlic, and red pepper to a measuring cup or bowl. Whisk in the olive oil slowly until emulsified.
Place your meat of choice into a one gallon ziplock bag along with the rosemary and pour the marinade over. Massage the marinade into the meat and let it soak up all that wonderful flavor for at least 2 hours. (Longer is better, trust me, but 2 hours will give you great flavor.)
We grilled this chicken and it was delicious!
