A simple but elegant appetizer that is sure to please. Fresh figs stuffed with Ricotta cheese and walnuts, drizzled with honey and sprinkled with thyme. What’s not to love?
We have been so very blessed to receive fresh fruits and vegetables from the man who supplies most of our animal food. There is always an assortment of foods. Recently, he brought over 2 boxes of figs along with collards, tomatoes, peppers, and pears.
INGREDIENTS
Figs (allow a minimum of 2-3 per person)
Ricotta cheese (goat cheese would also be delicious)
walnuts, finely chopped
honey
fresh thyme
Begin by washing the figs and drying them with a paper towel. Remove the stem tip and quarter the figs being careful not to cut all the way down the fig. Place on a heatproof baking dish or pan.
Spoon Ricotta cheese into the center of the fig. Place a few walnut pieces over the cheese, drizzle with honey and sprinkle with the thyme.
Place under the broiler for 4-5 minutes until the cheese is slightly browned, the figs are heated, and the honey begins to melt.
These can be served at room temperature.
